My Favourite Summer Grilling Dishes

I’ve been having one heck of a summer. No, I haven’t been touring the world or won the lotto. Instead, I’ve been catching up friends entertaining them in my backyard, all while cooking for them!! Yep, you read correct, I’ve been cooking, well more like grilling for them.  

I picked up a grill awhile back and on one of those hot, humid days in Toronto, I didn’t feel like being inside (my backyard is cool thanks to the multiple trees back there). So, I decided to grill some chicken and vegetables and to my surprise:

1. I didn’t burn them (you know that’s cause for celebration at my house).  
2. It was so simple and quick 
3. The food tasted so good

With these amazing results, I decided to start grilling more often and even invite friends over. Lol

Here are some of the amazing meals your girl has been grilling up for her squad:

 

Salmon w Avocado Strawberry Salad  You’ve got a meal rich in protein, healthy fats, vitamins and minerals! Did you know that ½ an avocado contains more potassium then a whole banana? That’s only one reason I love avocados so much (keep watching for blog post all about avocados coming soon!). You could even swap out the strawberries for other in-season fruits like peaches (out now) or with fall comes apples.

 

Grilled chicken breast w Kale Salad – One of the most versatile meals that you can change up with a little spice or different vegetables and it will feel exciting and new every time.

Portobello Mushroom Egg Sandwich-Portobello mushrooms offer a great source of B Vitamins (B6 & B12 in particular) helping boost energy and bring some great new flavors to your meal!

I’m gonna be honest with you, I was tooting my own horn with the results of these meals. I mean for a chick that hates to cook, I think I’ve done a pretty good job. 

Here’s why I’m sharing this information with you. Cooking and eating clean doesn’t equate to countless hours slaying over a hot stove. It also doesn’t mean that you have to enjoy cooking, because I’m proof it’s not true. It’s about finding and making healthy meals you enjoy that will help you to look and feel better.
