Lunch in a Mason Jar
Here’s a quick and easy way to prep your salad in advance (minus any sogginess!)
Ingredients in order from bottom of the jar to the top:
– Homemade Salad Dressing: Olive oil & balsamic vinegar (& spices)
– Something crunchy that won’t get soggy in the dressing: Chopped yellow bell peppers or carrots
– Sliced cherry tomatoes
– Chopped Kale & Cabbage salad mix
– Tablespoon of dried cranberries & sunflower seeds
– Chopped protein (from dinner’s leftovers)
– Sliced Light Bocconcini cheese ball (because who doesn’t love a little cheese!)
Cap your mason jar and remember to shake it right before lunch to mix up the ingredients!
